I make large batches of the gel with coconut water and store in the fridge. Per use, I mix a couple of tablespoons of the gel with cut up fruit and like a half spoonful of plain greek yogurt. The Chia gel really lets met get a lot of mileage out of just a bit of yogurt, both taste and consistency wise, without overpowering my belly with that "I just ate a bunch of dairy" feeling. I eat it and then can run or bike right after. During the winters I eat steel cut oats for breakfast, but that's a no go in the heat. This is a perfect high fiber, low glycemic summertime replacement. The 2lbs lasts my girlfriend and I about a month--ands that breakfast just about everyday. great deal at the price. Now, i'm looking for other inventive ways to use the seeds. Try them out!

Shipment and Delivery was very prompt and fast. I actually received the items 2 days before my estimated time. Today Mixed 1 tbsp of seeds with 1 cup of acai juice in the blender with ice. I'm very energized right now and awaken. I will make the gel tonight and try mixing some of the gel in my breakfast. purchased seeds for the iron and fiber. If this can regulate my digestive system and help boost my anemia I will purchase again..
Update 12/15/10- Still using the Chia seeds, however I DO NOT recommend making the GEL for anyone with a weak stomach. The sight and feel of it send me up the walls several times. I've restarted taken the seeds as is. In my old fashioned oatmeal, yogurt, and salads. My appetite has changed a lot.

This is my first experience with Chia. I bought the book and read the nutritional value of the product. I have been using it for a month. It really cleanses the digestive system. It takes getting used to at first, as it has the texture of Okra. It has no flavor to speak of, so I use it twice daily and have sprinkled it on cereal, salads and mixed it half and half with jam. With Jam, used when it is mixed with water. I mix up a 1/2 cup of Chia with 9 equal parts of water and put it in the refrigerator to have available to use. I have a cup of green tea and put approx. 1/4 cup in the tea.

Chia is a really good food. Full of omega 3, soluble fiber, and protein. I put chia seeds in a coffee grinder and use the meal on my cereal in the morning.
One thing I can't stand is this irrational hippy crap of "it contains no chemicals". Everything is a chemical. Maybe they didn't use synthetic chemicals to produce it, but it certainly contains chemical, lots of good ones to be sure, but it contains chemicals. There a are loads of plants in nature that have very bad chemicals that you don't want in your body. No chemicals is just a garbage statement. How about pesticide free, or something to that effect, that would at least have meaning.
